position, both with regard to acreage and production. Rapeseed and mustard are the most
important sources of edible oil. The oil content of the seeds of different forms ranges
from 30 to 48 percent. The oil is mainly used as a cooking medium in northern India and
can not be easily replaced by other edible oils. The seeds and oil are used as a condiment
in preparation of pickles and for flavoring curries and vegetables. The oil cake of Saison

vegetables.
